Quick Recipes
These recipes may be used at any time when you need a speedy or economical meal.  You may find them to be particularly invaluable during periods of shortage or financial constraint.
QUICK TOMATO SAUCE

1 tin tomatoes
1 onion
2 cloves of garlic

Chop the onion and fry slowly so the slices don't burn them add the chopped garlic.

Just fry for a couple of minutes them add the tomatoes, rinse the tin out with water and add that. Season with salt & pepper.

You can use it like that or you can blitz it up with a hand blender or food processer. Simple!

CHEATS PIZZA DOUGH

500g s/r flour
250ml water
Salt

Bring everything together in a bowl and kneed it a little to make an elastic dough. If it feels a little dry add a little more water.

Roll it out to whatever shape you want, top it with a bit of that tomato sauce and whatever topping you fancy.

Try ham, pepperoni, cheese or use anything you have in your cupboard that you want to use up.

ROASTED VEGETABLES

Again whatever veg you have.
Onion, celery, pumpkin, courgette, carrot, squashes, leek, peppers.

Chop everything up to bite sized pieces

Put everything into a roasting tin, drizzle with oil, season with salt & pepper, then roast for about 1 hour.

EGGLESS CHOCOLATE PUDDING

200g butter
200g bar of chocolate
200g nuts (whatever you've got)
200g s/r flour
200g sugar
200ml milk
Pinch of salt

Put your nuts into a food processor and blitz till chopped up.
While your machine is still running add the chocolate, followed by the butter and then the flour.
Finally add the milk and salt.

Grease and line a cake tin and pour in the batter mixture.

To add different flavours you can add:-
Any dried fruit, cherries, chopped up tinned pears or apricots just before you've poured it into the cake tin.

Serve with either, Yoghurt, cream or ice cream. Delicious!
